Triple Chocolate Zucchini Brownie Bites

… with chocolate Ganache topping (picture) or Everyday Chocolate Icing.
Yes, these are entirely divine, chocolaty to the extreme, moist, fudgy … and yes, there is whole wheat flour and zucchinis in them too.  See, that makes you feel better already!

These are healthy! Well, ok, maybe not exactly healthy … but they are good for you. Batting Eyelashes

Here is the recipe:

  • 1 ½ cups Sugar
  • ½ cup Vegetable Oil
  • ½  cup Milk (skim or 1% works fine)
  • 2 tsp Vanilla
  • 1 tsp sweet dough baking essence (entirely optional but really good for that extra lil  somethin’  Happy)
  • 1 large Egg
  • 1 cup Whole Wheat Flour
  • 1 cup All-Purpose Flour
  • ½ cups Cocoa ( I REALLY recommend this one! It makes the richest chocolate taste!)
  • 1½ tsp Baking Soda
  • 1 pinch of Sea Salt
  • 2 cups (packed) finely shredded Zucchini
  • ½ cup semi-sweet Chocolate Chips or chopped up chocolate of choice

    Preparation Instructions

    Preheat oven to 350 F. Grease mini muffin pan.
    Combine sugar and wet ingredients.
    I use the unrefined sugar, works great here. Note though that it is NOT the same as brown sugar!
    Beat until well mixed.
    Mix all the dry ingredients, except chocolate and zucchini,  and add the wet ingredients. Mix.  Then add zucchini and chocolate chips. Stir until well mixed. Spoon into the mini muffin pan and bake 15 to 20 minutes or until a toothpick comes out clean.
    While the brownie bites are baking, make the Ganache OR the Every Day Icing.

    Ganache

    • 3/4 cup Heavy  cream
    • 8 ounces semisweet Chocolate, coarsely chopped
    Place the cream in a small heavy saucepan over medium heat, and bring to a boil, stirring.
    Watch carefully so it doesn’t boil over or burn.
    Place the chocolate in a heat proof bowl. Remove the cream from the heat, and pour it over the chocolate. Stir until the chocolate is melted. Place the bowl, uncovered, in the refrigerator to chill for at least 30 minutes, or preferably 1 hour. Place the electric mixer beaters in the refrigerator to chill.
    After it is cooled, whip the ganache on high speed for 2 to 3 minutes, or until the frosting lightens in color and drastically increases  in volume. Pipe the ganache on the brownie bites when they are cool. Store leftovers in the refrigerator.

    Everyday Icing

    that is also extremely yummy and quicker to make, do the following:
  • 2 cups Powdered Sugar
  • ¼ cups Butter, softened
  • ¼ cups Milk
  • 6 Tbsp Cocoa Powder
  • ½ tsp Vanilla (optional)

    Mix all ingredients and spread over just cooled brownie bites. Or, melt the butter with the milk, mix all the other ingredients in and dip the tops of the brownie bites while still warm. Cool on a drying rack.
    You can also  bake this as a brownie pan. In that case bake for 25-35 minutes and spread the Everyday Icing on while still slightly warm.
    All these options are extremely yummy and you should probably try them all  - just to make sure I’m right
