Crème Fraiche Frosting (LC, GF, SF)

This frosting is especially suitable for those times when a heavy frosting is a bit too much, but just plain whipping cream is not quite enough! It is light and fluffy, but a little heavier than whipped cream alone and the slight tang from the crème fraiche adds a certain kind of freshness that goes especially well with fruit and citrus flavors!

 

 

Ingredients:

3/4 cup crème fraiche *

1 cup heavy whipping cream

1/4 cup erythritol, powdered

1/4 tsp stevia extract 

1 tsp flavoring of choice (citrus flavors go particularly well here)

1 tbsp. lemon, lime or orange zest (optional)

1/4 tsp glucomanan powder

 

Preparation:

Place everything but the glucomanan powder in a bowl. With a mixer beat on high until soft peaks form. While still mixing, slowly drizzle the glucomanan in and keep beating on high until the frosting forms stiff peaks.

Use for cupcakes, cakes or as a topping for pies and other desserts.

 

* Whole Greek yogurt or sour cream can be substituted, but the consistency of the icing will be much runnier.

 

Makes about 3 cups of frosting.

The whole recipe is 7 g of carbs if you’re using homemade Crème Fraiche!
